The cheese that is exposed to mold is ripened and the veins of mold appears within the body of the cheese.
FRFresh
The cheese has not undergone any ripening. They are 'fresh' and often spreadable.
RDRipened
The ripening process develops within the whole body of the cheese.
SRSurface ripened
The ripening process starts from the surface and moves into the body of the cheese. These cheeses are often one color on the exterior and another on the interior; the interior is usually soft and buttery. The outer 'rind' can be consumed and may be washed prior to packaging.
